PAJEON ( Korean Scallion Pancakes)
What is jeon (전)?
"Jeon" refers to food that has been battered and pan-fried. Jeon are usually savory and have a large range of combinations like green onion, kimchi, seafood, and more. Jeon is often translated as pancake do to its flat, round appearance, but it is not your typical breakfast meal. Jeon is eaten as a side dish to a main meal, as a snack, or as the meal itself, and usually has a dipping sauce to accompany it.. A special tradition with jeon is to make it when it's raining and to serve it with makgeolli, a Korean rice wine.
Ingredients:
- 1 cup all- purpose flour
- 1 cup water
- 1 egg
- 1 cup chopped scallions (green onion)
- 1/2 cup chopped onions
- Assorted seafood (squid, shrimp, etc.) Chopped (Optional)
- Salt and pepper, to taste
- Vegetable oil for frying
Dipping sauce:
- 3 tbsp Soy sauce
- 1/8 teaspoon rice vinegar
- Pinch of red pepper flakes
Directions:
1. Prepare the Batter: In a large mixing bowl, combine the flour, water, and egg. Mix until the batter is smooth.
2. Add Vegetables and Seafood: Add the chopped scallions, onions, and assorted seafood (if desired) to the batter. Mix everything together until well incorporated. Season the batter with salt and pepper to taste.
3. Heat the Pan: Heat a non-stick frying pan or skillet over medium heat. Add a couple of tablespoons of vegetable oil and spread it around to coat the bottom of the pan.
4. Cook the Pancakes: Pour a ladleful of batter into the hot pan, spreading it out into a thin, even layer. Cook the pancake on each side until it is golden brown and crispy. Use the spatula to press it down slightly and ensure even cooking.
5. Serve: Transfer the cooked pancake to a plate lined with paper towels to remove excess oil. Cut into slices or serve it whole. Repeat the process with the remaining batter. Serve the Pajeon hot, with the dipping sauce on the side.
6. Make Dipping Sauce: In a small bowl, mix soy sauce with a splash of rice vinegar and a pinch of red pepper flakes to create a dipping sauce for the pancakes.
