Kimchi-jeon (Kimchi Pancake)- A Savory and Crispy Cuisine



 KIMCHI-JEON (Kimchi Pancakes)



What is jeon (전)?

    "Jeon" refers to food that has been battered and pan-fried. Jeon are usually savory and have a large range of combinations like green onion, kimchi, seafood, and more. Jeon is often translated as pancake do to its flat, round appearance, but it is not your typical breakfast meal. Jeon is eaten as a side dish to a main meal, as a snack, or as the meal itself, and usually has a dipping sauce to accompany it.. A special tradition with jeon is to make it when it's raining and to serve it with makgeolli, a Korean rice wine.
Ingredients:

1 cup kimchi, finely chopped
1/2 cup kimchi juice
1 cup Korean pancake mix ( Buchim garu)
3/4 cup water
1 small onion, finely chopped
2-3 green onions, chopped
Salt, pepper, and sesame oil, to taste
Vegetable oil (for frying)

Dipping Sauce:

2 tbsp soy sauce
1 tbsp water
1/2 tsp sugar
1 tsp vinegar
1 tsp sesame seeds
1 green onion, finely chopped

Directions:

1.  Prepare the Dipping Sauce: In a small bowl, mix soy sauce, water, sugar, vinegar, sesame seeds, and green onion. Set aside.
(Soy sauce 2 tbsp, water 1 tbsp, sugar 1/2 tsp, vinegar 1 tsp, sesame seeds 1 tsp, green onion)

2. Prepare the Batter: In a large mixing bowl, combine the chopped kimchi, kimchi juice, Korean pancake mix, water, chopped onion, and green onions. Mix well until the ingredients are well incorporated. The batter should be slightly thick but pourable. Lastly, season with salt, pepper, and a few drops of sesame oil according to your taste.
(1 cup Kimchi, 1/2 cup kimchi juice, 1 cup Korean pancake mix, 3/4 cup water, onion, green onion.)

3. Heat the Pan: Heat a non-stick frying pan or skillet over medium-high heat. Add a generous amount of vegetable oil to cover the bottom of the pan. 

4. Cook the Pancakes: Pour a ladleful of batter into the hot pan and spread it into a thin, even layer. Cook the pancake for a few minutes on each side until it becomes golden brown and crispy. Use a spatula to press it down slightly for even cooking. (Add more oil to the pan if needed while frying.)

5. Serve: Transfer the cooked kimchi pancakes to a plate lined with paper towels to remove excess oil. Cut them into bite-sized pieces and serve hot with the dipping sauce.
